Halloween at crafty cooks

Pumpkin cakes… And less than 80 calories per cake

We are in the second week of our pumpkin cooking here at Crafty Cooks, and this week we are using raw pumpkin.

These cakes are very similar to carrot cakes, a real favourite here!

To make 6 cakes, you need :
2 oz self raising flour
1 oz butter
2 oz sugar
2oz chopped dried apricots
2oz grated pumpkin
1/2 egg
1/2tbsp orange juice
1/4tsp mixed spice

Rub  the butter and flour together, add all the other ingredients and mix well.  Put into cupcake cases and bake

for 12 to 15 minutes at 180°/170°fan.

They are delicious as they are, but can be halloween-ified (that totally is a word) by making some icing decorations.

You could also make a witches hat using melted chocolate and sprinkles
