Fish finger sandwiches

Who doesn’t love fish finger sandwiches?   We all do, but wanted to see if we could make them better.

As a family we don’t eat a huge amount of fish, and when we do it’s either salmon or covered in batter from the local chippy!  It’s not that we don’t like fish; we do, but I just always put off cooking it.

Anyway, as with most things that I put off doing for myself, I am attempting to stop that with my own children.  So this is the first step towards my kids (and me) cooking fish.  They both had a go at this recipe, although neither realised just how messy it could get.

Homemade fish finger sarnie

Ingredients
  • 8 Soft flour tortilla wraps
  • 4 skinless white fish fillets
  • 50 g cornflakes, crushed
  • 1 egg
Instructions
  1. Heat the oven to 200°/180° fan or Gas Mark 6.

  2. Cut each fillet lengthways and then each strip into 2.

  3. Dip the fish into the egg and then coat with the cornflakes.  Place on a baking tray and chill for 10 minutes.

  4. Bake for 20 minutes

  5. Remove from the oven and then add 2 pieces of fish onto a tortilla wrap, add some salad leaves and a squirt of tartare sauce or mayonnaise.

    Fold and enjoy.
