You know that moment when you realise that tonight is supposed to be steak night but you put the steak in the freezer yesterday afternoon! Well that is my life! So 3 jumps at the cupboard door is the order of the day, and it’s lucky that I picked the shopping up yesterday. Please don’t judge me; it’s been a busy week, and whilst I quite enjoy the solitude of Tesco with an audible book in my ears, yesterday was a day for sitting on my behind enjoying a quiet cup of tea.
So, as a result, tonight was a quick throw it together dinner, but for once not a single scrap made it into the food waste bin! The kids loved it, and it was only 2 ingredients, 3 if you include the egg wash!
Chicken pie mix puff pastry pasties with potatoes and peas, which as well as being easy was cheap as chips.
- 1 tin chicken pie mix
- 1 packet ready made puff pastry
- 1 egg, beaten
Preheat the oven to 200°/180° Fan or Gas Mark 6.
Remove the puff pastry from the box and unroll.
Cut the pastry into 4 equal rectangles, and brush the beaten egg around the border. Add a 1/4 of the chicken pie mixto one half of the pastry.
Fold the pastry over and seal the 3 edges. Place on a baking tray and brush with the beaten egg.
Bake for 20-25 minutes until the pastry is golden brown.
While the pie is cooking, peel and boil some potatoes and some veg.
There you go, a super simple and super cheap dinner. Not haute cuisine, and in an ideal world I wouldn’t resort to tinned processed foods, however on this occasion life beat me! One day though, in the not too distant future, my kids are going to leave home and if they need a quick 15 minute meal I would rather it was this than a pot of noodles! Have a great day, Maria xx
