A firm family favourite, these chicken fajitas are a weekly meal for us.
If I was to give Haydn and Louloo a chicken sandwich they would turn their noses up at it, but put the same ingredients in separate bowls down the middle of the table, and invite them to make their own fajitas, and they will eat their own body weights in these delicious wraps.
There are plenty of sauces or kits that you can buy however in a house where the grown ups like really hot spice, Louloo prefers no heat and Haydn is in the middle, it is easier to make them from scratch.
- 3 chicken breasts, diced
- 2 cups sliced peppers, frozen
- 1 cup diced onion, frozen
- 12 soft flour tortillas
- salad leaves
- Cucumber, cut into strips
- 1 carton tomato passatta
- 1 tsp cayenne pepper for the grown ups
- soured cream
- 1 red chilli seeds are optional
- cheddar cheese, grated
Cook the chicken, onions and peppers in a wok until the chicken is thoroughly cooked.
Add the passatta and continue to cook for a couple of minutes. At this point I removed a portion for my daughter who doesn't like any spice and put it to one side.
Another portion was removed and placed in a small saucepan with some mild salsa, cook for a further 2 minutes,
To the remaining fajita mix, add cayenne pepper to your taste as well as a red chilli if you like. Cook for a further 2 minutes.
Place all of the ingredients in the middle of the table and dig in!
