In my house, these are a Christmas staple; to be eaten from the beginning of December until the end of March!
Readily available in all supermarkets, you can buy 6 for £1, but why take away the fun of making them when they can be made for peanuts.
I have made 4 dozen this afternoon and they only cost me about £1.50 in ingredients.
The pastry was made using
6 oz. flour
5 oz. butter
1 oz. sugar
That’s it! No water needed, simply rub the butter into the flour, add the sugar and mix to a dough. Roll out the pastry fairly thinly and cut circles of pastry out. Line the (already greased) patty tin, add a teaspoon of mincemeat to each pastry case and top with a smaller circle. Brush with egg or milk and bake on 180° for 12 to 15 minutes.
There are a few other mince pie recipes that I have been sent, including one that has cream cheese in it, so look out, as this may appear soon.
