Pumpkin baking

Next week (and the following week too) our ‘hero’ will be the pumpkin.  image

An under used ingredient in this country; the vast majority of pumpkins sold will be done so in the week leading up to Hallowe’en, when very few will be used for anything other than jack o’ lantern carving.

Don’t get me wrong, we love our pumpkin carving as much as the next person but there must be so much more that these beautiful autumn fruits have to offer.

In our cookery Club sessions we will be making scones with cooked, mashed pumpkin and cakes with raw, grated pumpkin, but there is a world of possibilities out there, so I grabbed a large, but not giant, squash and set to work.

You only need to look at  Pinterest to find myriad ideas from curry to pancakes and from soup to pasta alternatives.  Pumpkin-etti anyone?

As a huge fan of courg-etti I thought that I would give this a try.  I shall update you all when I’ve tried it out.
